For an unusal take on a sumptuous panna cotta pudding, infuse your panna cotta with Florame's organic lavender tea. It looks stunning, tastes divine and its easy to make.
This recipe serves 4. To make the panna cotta you will need:
3 gelatine leaves (preferably vegetable)
125ml/4.5fl oz milk
125ml/4.5fl oz lavender tea (see above)
250ml/9fl oz double cream
25g/1oz sugar
- For the panna cotta, firstly brew your lavender tea, have a cup and let the rest of it get cold.
- Once the lavender tea is cold, soak the gelatine leaves in a little cold water until soft.
- Place the lavender tea, milk, cream and sugar into a pan and bring to a simmer.
Squeeze the water out of the gelatine leaves, then add to the pan and take off the heat. - Stir until the gelatine has dissolved.
- Divide the mixture among four cocktail or sundae glasses and leave to cool. Place into the fridge for at least an hour, until set.
Serve with a smidge of whipped cream topped with fresh blueberries & blackberries soaked in sloe or damson gin. Garnish with a few sprigs of lavender. Totally scrummy and you'll impress your mates.
